Prep Time: 10 mins (plus ~6 hours freezing time) Makes: 8 popsicles
Ingredients:
2 fresh mangoes
Zest of 1 lime
1/4 cup lime juice (1-2 limes) 1/3 cup coconut milk (you can use light coconut milk if you wish)
Method:
Place mango, lime zest, lime juice and coconut milk in food processor and pulse until combined.
Pour into popsicle moulds and freeze overnight if possible.
To remove from popsicle moulds, run under warm water for a few seconds.
Enjoy!
If you prefer creamy popsicles, increase the amount of coconut milk a bit. If you love the sourness of limes, then use a bit more lime. Play with the recipe until you have it just the way you like it!
